Olla everyone!

Sorry terbengkalai skit blog masak ni, illy asyik update my first blog.. minta ampun yaa :) Harini illy decided nak share resepi sup ketam.. sekarang ni banyak kes dengi dan salah satu tips untuk bantu cepat sembuh is to makan sup ketam... mana lah tahu ada kat luar tu yang tengah kena dengue (minta jauh...) bole la cuba ikhtiar dan harap bermanfaat...

Kalau tak demam dengi pun bole jer makan sup ketam ni.. sedap, sihat dan sangat menyelerakan.. nak buat pun sempoi senang sangat.. tak payah banyak skill, orang bujang pun bole buat :)

Resepi Sup Ketam

Bahan-Bahan

  1. Ketam 2 ekor size medium, bersihkan dan potong tengah.. kalau besar bole potong empat.. Tips : nak kasi empuk dan senang makan... ketuk dekat tempat keras2 guna lesung so that nanti bila nak makan senang.. isi ketam mudah di keluarkan.
  2. Halia setengah inci, potong nipis. Bagus Halia untuk buang angin.
  3. Bawang Besar (merah) potong nipis.
  4. Bawah putih 2 biji, tumbuk hancur. Tips: kalau illy, senang siang banyak2 terus masuk blender letak garam skit masuk container dalam peti ice.. bila nak guna senang, just ceduk masuk kuali.haha.. jimat kan masa tak?
  5. Daun Kunyit sehelai, potong ikut suka.. illy prefer slice lebih kurang 1cm

Cara- cara memasak

  1. Masuk air 3 cawan dalam periuk dan biar mendidih
  2. Once da start mendidih, masuk kan bawang putih dan halia. Tunggu sampai naik bau.
  3. Lepas tu masukan bawang besar serta ketam. Tunggu dalam 10 minit.. nak tahu da masak ke belum tengok warna ketam berubah merah.
  4. Then last sekali masuk daun kunyit tadi. Kacau skit masuk garam secubit.

Selamat Mencuba :)

Thai Green Curry

Last night, I cooked thai green curry! nyum nyum!

GREEN CURRY PASTE:
1/2 to 1 green chili, sliced
1/4 cup shallot OR purple onion, diced
3-4 cloves garlic, minced
1 thumb-size ginger, grated
1 stalk fresh minced lemongrass , minced
1/2 tsp. ground coriander
1/2 tsp. ground cumin
3/4 to 1 tsp. shrimp paste OR 1 extra Tbsp fish sauce
1 (loose) cup fresh coriander/cilantro leaves and stems,
chopped
1/2 tsp. ground white pepper
2.5 Tbsp. fish sauce
1 tsp. brown sugar
1 Tbsp. lime juice
1/4 can coconut milk

CURRY INGREDIENTS:
1 to 1.5 lbs. (about 0.7 kg) boneless chicken thigh or
breast, cut into chunks
3/4 can coconut milk
4 kaffir lime leaves OR substitute 1 tsp. grated lime zest
1 red or green bell pepper, seeded and cut into chunks
optional: vegetable of your choice, I used brinjal &
long beans
Generous handful fresh basil
2 Tbsp. peanut oil

PREPARATION
Place all the "green curry paste" ingredients
together in a food processor, and process to a paste. Set aside.

Prepare lime leaves by tearing the leaf away from either
side of the stem. Discard central stem. Then, using scissors, cut leaves into thin strips. Set aside.

Warm a wok or large frying pan over medium-high heat. Add
oil and swirl around, then add the green curry paste. Stir-fry briefly to release the fragrance (30 seconds to 1 minute), then add most of the remaining coconut milk, reserving 1 Tbsp. per serving portion for later.

Add chicken, stirring to incorporate. When the curry sauce
comes to a boil, reduce heat to medium or medium-low for a nice simmer. Simmer 5 minutes, or until chicken is cooked through. Stir occasionally.

Add vegetables, plus strips of lime leaf (or lime zest),
stirring well to incorporate. Simmer until vegetables are cooked to your liking.

Do a taste-test, adding 1-2 Tbsp. fish sauce if not salty or
flavorful enough. If you'd prefer a sweeter curry, add a little more sugar. If too salty, add a squeeze of lime or lemon juice. If too spicy, add more coconut milk. Note that this curry should be a balance of salty, spicy, sweet and sour.

Serve with Thai jasmine rice on the side, allowing your family members to add their own. Top each portion with fresh basil, then drizzle over a little coconut milk and ENJOY!

Steam Boat Recipe

Last couple of days, I decided to prepare a simple steamboat for my lil family. I was tired just came back from work and it happens to to be it was raining at that time. Open my fridge and saw the steamboat sets that I bought earlier from Jusco.. so why not? It is yummy, easy to make and very interactive food preparation. It would be a great time to catch up with family members and together enjoy a good meal.

By the way, I got the electric cooker & the pot as wedding gift last time. It have been store for quite awhile, time to give it some love!

Lets get to it, shall we?

Steamboat Recipe :
1) One set of fish ball and the gang. You can purchase each of them seperately, but I decided to just grap the set as it is easier for me.
2) Dig in my fridge and saw some prawns and veggies
3) Soft egg taufu
4) Mushroom
5) You can put almost anything, from noodles to any meat  or veggies.. all you need is a lil bit of creativity. It is also best to utilize what you have in the fridge.

The Soup :
I put thai tom yam paste, you out chicken paste if you want to. For healthier option, chop some chicken and dump them in for soup flavouring.. After all it is optional because your soup will be rich in flavour once you input all your steamboat in.

Dipping :
You can buy any ready made dipping but I love to do my own. What you need is few "chili padi" and some "daun sup" or well known as coriander leaves (chop them) and mix with some light sweet soy souce also known as "kicap".

I hope you like this simple idea on what you can prepare for your family. Arigato! Dont forget to check out my other blog where I share about beauty and share more tips. Click here
